<p><strong>serving:</strong> 13.5 Tablespoons</p>
<p>&nbsp;</p>
<p><strong>Ingredients</strong></p>
<p><strong>4 oz</strong> (1 stick) Unsalted Butter, room temperature</p>
<p><strong>1 oz</strong> (Roughly 2tbsp) Confectioner&#8217;s Sugar</p>
<p><strong>1/8 tsp</strong> Salt</p>
<p><strong>1/4 tsp</strong> Vanilla Extract</p>
<p><strong>2 oz </strong>(1/4 Cup) Hulled (Top are removed) Fresh Strawberries</p>
<p>&nbsp;</p>
<p><strong>Instructions</strong></p>
<p>1. In a food processor add Unsalted Butter, Confectioner&#8217;s Sugar, Salt, and Vanilla Extract.</p>
<p>2. Mix until smooth and well combined.</p>
<p>3. Add Hulled Strawberries.</p>
<p>4. Mix until strawberries are coarsely chopped.</p>
<p>5. Store in a glass jar or plastic container and place it in the fridge.</p>
<p>Note: This can also be stored in the freezer. Just place it on a piece of plastic wrap and form it into a log. Then roll it in the wrap and twist ends. Can be stored for up to 2 months.</p>

One in particular are strawberries and since May is the national month for strawberries, I’ve decided to buy 2 containers of strawberries and start celebrating.</p>
<p>With one of my recipes I’ve decided to make some Strawberry Buttermilk Muffins.  It was easy and delicious. I like to add less sugar to recipes that consist fruits, since the fruits itself carry their own natural sugars.  So where the brown sugar is 1 oz you can add an extra ounce if you like.</p>
<p>&nbsp;</p>
<p style="text-align: left;"><strong style="font-size: large;">Strawberry Buttermilk Muffins </strong></p>
<p style="text-align: left;">Serving: 10 Muffins</p>
<p style="text-align: left;"><span style="text-decoration: underline;"><span style="font-size: medium;">Ingredients</span></span></p>
<p>2oz  Canola oil<br />
4oz Reduced Fat Buttermilk<br />
1 Egg<br />
1/2 tsp Salt<br />
2 tsp Baking Powder<br />
1oz Brown  Sugar<br />
8oz Unbleached  All-Purpose Flour<br />
6oz Chopped Strawberries</p>
<p>&nbsp;</p>
<p><span style="text-decoration: underline; font-size: medium;">Instructions</span></p>
<p>1. Preheat oven to 375 degrees F (190 degrees C)</p>
<p>2. Prep muffin pan greasing the surface or inserting cupcake  liners.</p>
<p>3. In a small bowl, add the oil, milk, and egg. Beat lightly until well combined.</p>
<p>4.In a large bowl, mix the flour, sugar, baking powder and salt.</p>
<p>5. Gently mix in the chopped strawberries until covered with flour.</p>
<p>6. Pour in the liquid mixture and stir together.</p>
<p>7. Fill the muffin cups and bake 25- 30 minutes, or until you can insert a toothpick and it comes out clean.</p>
<p>8. After baking cool 15 minutes and remove from pans.</p>

I would pick up the organic cake mix if it’s on sale, sometime they can be a little pricey in a few markets. But I normally get a box from Trader Joe’s. Their chocolate and yellow cake mix is really good. I like to reduce the oil and add something else that’s low in fat and would keep the cake moist. I use to add a banana but sometimes it can make the cake dense. Plus adding it to a yellow or vanilla cake mix will change the taste. I remember when l used to juice; I would use the carrot skins for making carrot cake. So that gave me an idea.</p>
<p>Why not just add the carrots to the cake mix. The first time I made it was gone that weekend. In the next batch I added the poppy seeds. Also the cake won’t taste like carrot cake and as a matter fact in the picture you can hardly tell that it’s there.</p>
<p>PS Poppy seeds are optional for those who have to take a drug test</p>

Years ago I used to eat boiled eggs almost every day until I realized that chickens shouldn&#8217;t be mass producing eggs so rapidly. But that&#8217;s for another time. To eat less animal products as I can I like to try different recipes that will give me the taste and texture as the other recipes (using animal products) out there. Here&#8217;s one that&#8217;s one of my favorite.</p>

<li class="instruction">Preheat the oven to 350F and lightly grease a loaf pan with non stick cooking spray.</li>
<li class="instruction">In a large bowl mix the oil, almond milk, sugar, vanilla and cinnamon</li>
<li class="instruction">Match the bananas into the oil, almond milk and sugar (it&#8217;s okay to leave little chunks of bananas)</li>
<li class="instruction">In another bowl combine flour, baking soda, and salt</li>
<li class="instruction">Pour the dry ingredients into the wet ingredients</li>
<li class="instruction">Fold in the ingredients until well combined (folding it will avoid losing the chunks of the bananas)</li>
<li class="instruction">Pour the batter into the loaf pan and bake for 40 &#8211; 60 mins or until a toothpick is inserted into the center of the bread comes out clean.</li>
<li class="instruction">Leave the bread in the pan for at least 15 min and the place on a cooling rack. Wait until the bread is fully cooled until sliced.</li>
